This weekend we took advantage of the fresh local strawberries that are so delicious right now and made a fresh strawberry cake. I wanted Little A to be able to have some so I made it toddler-friendly (i.e. mostly sugar-free), but in the end he really wasn’t interested and I didn’t see any point in pushing it.
I’m keeping things simple while in the country so I didn’t even bake the actual cake by myself – I bought one. But you could use any plain, vanilla or perhaps lemon sponge cake. Mine was in three layers. Between the first two layers I mashed up a banana and mixed it with whipped cream (without anything else added) and between the middle and top layers, I mashed up fresh strawberries with mascarpone, a bit of whipped cream and a teensy bit of honey. The I just topped it with lots of plain whipped cream and fresh strawberries. It was really yummy, especially the day after!
