We have been pretty busy the last few days between jetting back and forth between Stockholm and Lund and everything else we have going on. It’s all I can do to make sure that Alec is getting his homemade baby food – when it comes to what my husband and I are eating, I’m resorting to some old fallback favourites. Like pasta shells with fresh herbs and feta.
This is the easiest dinner you will ever make but it is super yummy: Cook pasta shells (gnocchi) in well-salted water. While the pasta is in, take a fork and mush up one package of good feta cheese, a big bunch of chopped fresh basil, about two table spoons of chopped fresh parsley, one table spoon chopped chives, half a clove of pressed garlic and some black peppar with a generous glug och good extra virgin olive oil. Mix the hot al dente pasta with the herb mixture and serve.
